Chatsworth estate, Farm shop butchery and Chatsworth game

Chatsworth park covers 1000 acres and is enclosed by a 15 km long dry stone wall and deer fence. It is home to red and fallow deer, sheep, cattle and many wild animals. The park at Chatsworth is a farmed, food-producing landscape. The grass you walk on is a crop grazed by sheep, cattle and deer. These offerings are brought to Pilsley via our traditional farm shop butchers who have a wealth of knowledge and experience. We are proud to be able to feature home produced offerings on our menus; including beef, lamb, venison, and pheasant strait from the estate.

Barter board/kitchen garden

We take great care to source produce locally where possible. So where better then out of our own kitchen garden in which we lovingly grow seasonal vegetables and herbs, we also take advantage of our talented Pilsley allotment growers in which we exchange beer for fantastic produce grown on our doorstep.

Courtyard dairy

Since The Courtyard Dairy’s opening in 2012, owners Kathy and Andy have won many awards (including cheesemonger of the year at the world cheese awards) and helped to promote British cheese in a multitude of ways. The Courtyard Dairy stocks and supplies a carefully chosen range of unusual and exquisite cheeses, selected direct from individual farms, and then only if the cheese is superior in quality and taste.  No compromises. For the best depth of flavour, the cheeses are still made by hand on the farm, with most farmers using their own high-quality unpasteurised milk from a single herd of animals.  Many of these farmers have less than 70 cows (the smallest producer has just 12!). The Courtyard Dairy’s cheeses are among the finest to be found anywhere in the world.

Jaquest smokehouse

Jaquest have been established since 1989 and are proud to say that there still producing sumptuous foods. Using traditional methods of Curing & Smoking, fresh British produce is infused with Sea Salt, Raw Cane Sugar, Herbs and Spices. then smoked gently for many hours using Beech & Oak creating a fragrant edge. Using these natural woods it creates a beautiful depth of flavour to all smoked foods which many other smoked products don’t get as the real smoked essence comes from the natural wood used to smoke the products.

Moss valley

The farm is family run, with the 4th Generation now farming here. Povey Farm extends to some 240 acres and lies in the picturesque Moss Valley, fairly close to the Sheffield / Derbyshire county boundary. The land is undulating with steep banks towards the valley bottom. The animals are specially selected from best crossbreed. The type of pig produced from these two types of pig makes the meat succulent and tender, Having an on-farm butchery provides a real farm to fork experience with traceability being a a major point in this.
